A South Indian side dish, or part of a vegetarian meal
- 400g green beans
- 100g dessicated coconut
- 1 finely sliced onion
- ½ tablespoon cumin seed
- ½ tablespoon grated ginger or ginger paste
- ½ tablespoon grated garlic or garlic paste
- 1 teaspoon turmeric
- 3 chillies, finely chopped
- 1 tablespoon vegetable oil
Trim the beans, cut them in 2 to 3cm lengths and boil them until almost done.
Meanwhile, heat the oil in a large pan and fry together the cumin seeds, sliced onion, ginger, garlic and chillies.
When the onions start to brown, add the beans, turmeric, coconut and salt to the pan. Mix everything together and cook for a few minutes until the beans are done.
